Smokey Baya

Made this little summer delight while doing the cocktail list for the Los Vida group, amazing on a warm day. The smoke from the Mezcal mixed in with the jam and Prosecco are just perfect.

Ingredients

  • 30ml Alipus Joven Mezcal
  • 10ml Mathilde Cassis Liqueur
  • 20ml fresh lime
  • 10ml Simple Syrup
  • 1 teaspoon of plum jam
  • 45ml of Calappiano Prosecco Extra Dry

Method

  1. Add all ingredients to shaker (minus the Prosecco and frozen berries)
  2. Shake vigorously to get the jam thorough
  3. Double strain into short glass
  4. Top up with Prosecco
  5. Garnish
